Walnut and Goat’s Cheese Bruschetta

    Ingredients
1/2 cup walnut pieces
4 thick slices walnut bread
1/2 cup French dressing
7 oz semi-soft goat’s cheese
     
  1. Preheat the grill (broiler).
Lightly toast the walnut pieces, then remove and set aside.
     
  2. Put the walnut bread on a foil-lined grill rack and toast on one side.
Turn the slices over and drizzle each with 1 tbsp of the French dressing.
     
  3. Cut the goat’s cheese into twelve slices.
Place three slices on each piece of bread.
Grill (broil) for about 3 minutes, until the cheese is melting and beginning to brown.
     
  4. Transfer the bruschetta to serving plates.
Sprinkle with the toasted walnuts.
Drizzle with the remaining French dressing.
Serve the bruschetta immediately with salad leaves with slices or chunks of walnut bread.
