Frothy Hot Chocolate

SERVES FOUR

4 cups milk
2—4oz dark (bittersweet) chocolate, grated
1 vanilla pod (bean)

 
   
1 Pour the milk into a pan.
Split the vanilla pod lengthways using a sharp knife to reveal the seeds.
Add the split vanilla to the milk; the vanilla seeds and the pod will flavor the milk.
   
2 Add the chocolate. The amount to use depends on personal taste start with a smaller amount if you are unsure of the flavor and taste as you go, adding more if necessary.
Heat the chocolate milk gently, stirring until all the chocolate has melted and the mixture is smooth.
   
3 Whisk with a wire whisk until the mixture boils.
Remove the vanilla pod from the pan.
   
4 Divide the drink among four mugs or heatproof glasses.
Serve the hot chocolate immediately.
